About

Three things that take our time

Coal

No gas. The coals are lit before noon and kept alive until closing.

Meat

Lamb and beef arrive every morning. We mince with a knife, not a machine.

Table

In the Caucasus nobody orders one dish per person. The table is laid from the middle and everyone reaches.
